Easy Delicious Grated Salad
A grated salad is just about the easiest make ahead lunch that you can do to ensure that your week day lunches are quick to prepare, healthy and delicious. This recipe is inspired from I Quit Sugar For Life, it is a very versatile recipe that can be adjusted to create the perfect salad for you.
Mason jar salads have been the rage for a while now and I think they are here to stay. For me the simplicity of grating or chopping fresh seasonal vegetables, adding protein in the form of meat, feta, or eggs and storing in the fridge until needed is what I love. This is a great to do on a Sunday before the week kicks off. I like to prepare the mason jar salads with all the grated vegetables, top with my choice of protein and store in the fridge. I then make up my choice of dressing and toast some nuts and seeds and store these. Then on a weekday morning all I have to do is grab my salad, fill a small jar with dressing and store a few of the crunchy toppings in a container. I can be all done in 5 minutes.
Basic Grated Salad 2 carrots
2 small zucchini
1 cup cauliflower florets
1 red onion or 4 spring onions
dressing of choice
1/2 cup lightly toasted pumpkin and sunflower seeds
Grate carrots, zucchini and cauliflower. Use a bender with grate attachment if possible. stir through the onion and divide among 4 plates or broad glass jars. Top the salad with dressing of your choice.
Other beneficial additions - protein eg chicken, sardines (omega 3 fats), feta, tuna, turkey (sleep and improved moods), boiled eggs, other vegetables; grated beetroot (good for liver), broccoli (alkalizing, good for cleanse), sprouts, radish, rocket, spinach etc.
Prue's favourite dressing
1/2 cup olive oil (of 1/2 flaxseed and 1/2 olive oil)1/4 cup tahini
2-3 tbsp apple cider vinegar
honey or rice malt syrup to taste
pinch kelp or sea salt Put all ingredients into a jar and shake.
